As far a cooking, I made the eggplant/tomato dish from Casa Vacanza and it turned out very good. We are using the olive oil and balsamic vinegar that we brought back. I made fresh pesto from basil in out garden and will make it with pasta or homemade gnocchi. I am also serving antipasti, thin slices of salami and prosciutto and pecorino cheese. Italy keeps living on at our house however we are not drinking wine 2 times a day unfortunately.
